Feb. 28 — Assistant Professor of Ecology & Global Change Jenny VanWyk, is working with Assistant Director of Farm Programs Charlotte Senders to create a Homesteading course to be offered in the fall semester, and are seeking feedback from potential students on its content and structure.
The course would cover history and theory as well as activities, potentially including seed saving, soil testing, composting, canning, jam making, food fermentation, sourdough, plastic sponge alternatives, natural dying, clothing mending, and poultry processing, depending on student interest and practical viability.
The survey is interested in feedback on structure, content, scheduling, accessibility, and potential collaborations with people within and without Hampshire.
